Recipe:
12 hard boiled eggs, chopped
1/4 cup fresh tarragon, chopped
1/4 cup red onion, finely chopped
1 Tbsp. Dijon mustard
1 tsp. salt
1/2 tsp. black pepper
1/2 cup mayonnaise
To Serve:
Bread-I like to use buttermilk bread
Combine all ingredients in a bowl and mix well to combine. Adjust seasoning as needed. Spread a thick layer of egg salad on a slice of bread and top with another slice. Carefully cut the crusts off the bread and cut the sandwich into four pieces.
