Spring Strawberry Salad with a Creamy Poppy seed Dressing

This salad was always a big hit when i served it to patrons at my old tea room in California.   Make sure to find a goat cheese that is mild and without any other herbs or added flavors.  This salad is all about subtlety.

For the dressing:
2 Tbsp. Honey
2 Tbsp. White wine vinegar
1.5 tsp. Dijon mustard
Pinch of salt
Pinch of pepper
1/2 cup Olive oil
2 Tbsp. Mayonnaise
1.5 tsp Poppy seeds

In a blender, combine honey, vinegar, mustard, salt and pepper.  With the blender running, slowly drizzle in the olive oil.  The mixture should be thick and creamy.  With the blender off, add the mayonnaise and poppy seeds.  Pulse the blender a few times to combine, but do not leave it on for more than a moment or two or you will break down the seeds.

For the salad:
Mixed baby greens
Fresh strawberries, quartered
Red onion, thinly slice
Goat cheese, crumbled

On a plate, arrange a handful of greens.  Artfully arrange the remaining ingredients and top with the dressing.  Alternately, combine all the ingredients in a bowl with the dressing and toss to coat.
